Pav bhaji



Pav bhaji is a combination of Two words pav/dinner rolls and bhaji which is usually a medley of vegetables(mashed) and spices.Pavbhaji is a typical Mumbai street food which has become popular not only in India but all over the world.The dabba walas are the life line of Mumbai (you can read about the dabba walla's here).These dabba walas are so busy that they don't find time even to have their lunch.It is believed that pav bhaji was invented so that the dabba walas can have their lunch on the go with out compromising on nutrition.Hence pav bhaji came into being and since then it has become popular among the street food lovers.



Pav bhaji is healthy ,nutritious,filling and more over a no brainier prep.I have used pressure cooker to speed up things but this can be done in a pan on stove top too.There are no hard and fast rules that it is strictly tea time appetiser you can have it for breakfast ,lunch or even dinner too.My kids love it for their lunch box too .Make sure you have fresh pav/dinner rolls to go with it .You can add any vegetable of your choice ,just raid the fridge and dump in what ever is left behind.Serve it only with amul butter please !!!


Recipe for pav bhaji 

Preparation time:10 minutes
cooking time: 30 minutes
Serves: 6


Ingredients
 

To pressure cook
  • 1 cup- peas (frozen)
  • 1 cup-carrot
  • 1 cup- cauliflower
  • 250 grams-potato
  • 1/2 cup -capsicum
  • 1/8 teaspoon -turmeric
  • 1 glass -water
  • salt to taste
Other ingredients

  • 1 -onion
  • 3 -tomatoes (pureed)
  • 1 teaspoon -cumin seeds
  • 1 teaspoon -ginger garlic paste
  • 1 teaspoon- chilly powder
  • 1/2 teaspoon -kashmiri chilly powder
  • 2 green chillies
  • 1 teaspoon-coriander powder
  • 1 teaspoon-garam masala powder
  • 1 teaspoon -chat masala
  • 1/4 teaspoon - black pepper powder
  • 2 tbsp-oil
  • 2 tbsp -butter
  • salt to taste
To garnish/accompaniment


Directions

1.To a pressure cooker add all the ingredients listed under "To pressure cook" and cook for 3 whistles on high and allow to release pressure on it self.

2.If you are not using a pressure cooker just add all vegetables to a pan and cover cook until the veggies are done.

3.To a pan add oil and butter followed by zeera(cumin) and onion.

4. Once the onions become translucent add tomato puree and cook for 1 minute.

5.Add all the remaining ingredients and give a stir.

6.Add the pressure cooked vegetables and  coarsely mash it with  a masher.

 7. Cook until all the ingredients come together ,if the mixture gets dry add some water.

8. Check for seasoning and serve it hot with accompaniments.
